Only one more day until Christmas Eve. Seems like time is running away and this year I’ve got the feeling that time is more than passing by. I had so many plans for different biscuits and managed to make less than I do normally. Anyways if you’re after something different than the usual average Christmas biscuits the Blueberry Vanilla Hearts will be right for you.
Blueberry Vanilla Heart Biscuit Recipe
You’ll need
- 150 g baking spread
- 150 g caster sugar
- 1 egg
- 1 tea spoon vanilla extract
- 300 g self-raising flour
- heart shaped cookie cutter
- 100 g blueberry jam (if you don’t like blueberry you can easily replace it with raspberry or strawberry)
- 50 g dark chocolate
Let’s get started
Mix baking spread and sugar with a hand mixer
Add egg and vanilla extract
Add flour (I like to sieve it before adding but that’s up to you)
Wrap dough in some cling film and pop it in the fridge for at least 1 hour.
Preheat oven to 180C (or whatever temperature you usually bake your biscuits on), roll the dough onto a floured surface, and cut some hearts.
Pop your hearts in your oven for about 10 minutes (until they go slightly brown on the outside)
Let them cool on a rack.
When your biscuits are fully cooled, heat up some blueberry jam in a little pan. Brush some jam onto one biscuit and “glue” the second one on top.
Melt some chocolate and sprinkle it onto your hearts.
